Jaggery

Jaggery (வெல்லம்) is a traditional Indian sweetener made by concentrating sugarcane juice and allowing it to naturally solidify into rich, golden-brown jaggery blocks. A timeless ingredient in South Indian kitchens, jaggery is loved for its distinctive earthy aroma, deep sweetness, and characteristic caramel-like flavour.
